Alle Belle- I (Goan Pancakes)

Alle Belle is a popular Goan dessert. This is a coconut and Goan palm jaggery stuffed pancake which is usually had with a hot cup of tea in the evenings.

Ingredients

For the Pancake Batter:-
  • 1/2 cup All-Purpose Flour
  • 1/4 tsp Salt
  • 1 Egg
  • Milk (as required)
  • A pinch Baking powder
  • Ghee (clarified butter , as required)
For the Stuffing:-
  • 3/4 cup Fresh grated/shredded coconut
  • 1 1/2 Goan Palm jaggery pyramids(small) (crushed)
  • 1/4 tsp Salt
  • 1/2 tsp cardamom powder

Instructions

Prepare the Pancakes:-
  • 1 In a bowl, add flour, salt, egg baking powder.
  • 2 Add milk as required to make a thin pancake batter consistency.
  • 3 In a small, 6 inch skillet, grease pan with ghee. Pour some batter in it. cook for 1 minute. Stuff with stuffing.
Prepare the Stuffing:-
  • 4 In a pan, add coconut, salt, jaggery and 1/4 cup water. Cook on low flame.
  • 5 Cook till all mixture comes together. Add the cardamom powder. Leave this mixture aside.
Assemble Pancakes:-
  • 6 Put stuffing as shown in pic.
  • 7 Roll from one side.
  • 8 Overlap the sides as shown.
  • 9 Roll again till you reach the end of the pancake.
  • 10 Enjoy with a hot cup of tea!
  • 11 You can also make them using a colored batter and a stuffing of coconut and sugar. This is my version. (See recipe notes below for recipe link).
