Bacon & Cheddar Corn Muffins

These savory muffins are easy-to-prepare little quick that are perfect for breakfast or a snack. These are packed full of flavor with bacon crumbles, cheddar cheese, sauteed onions and buttermilk.

Ingredients

  • 8 Slices bacon
  • 1 Onion (Chopped)
  • 11/4 cup Buttermilk
  • 1/4 cup olive oil
  • 1 large Egg (Lightly beaten)
  • 1 cup All-Purpose Flour
  • 3/4 cup Yellow cornmeal
  • 2 tsp Baking powder
  • 1/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp chilli powder
  • 1 cup shredded cheddar ((plus more for sprinkling over top))

Instructions

  • 1 Cook bacon until crispy, break into small pieces. Cook onion till soft. Mix all ingredients to make a smooth batter. Line a 12 cup muffin pan with cupcake liners. Fill half way with batter. Sprinkle Bacon and cheese.
  • 2 Fill with remaining batter 3/4 of the way full. Sprinkle with cheese and bacon bits on top.
  • 3 Preheat oven at 400 deg F(204 deg C). Bake for 15 minutes or until a toothpick in center comes out with a few moist clingy crumbs. Remove muffins from pan and cool on wire racks.
  • 4 Cool slightly for about 10 mins before serving.
  • 5 Cut into half to see the inside of the muffin. Enjoy!
