Goan Potato Bebinca (Bebinca de Batata)

Potato Bebinca or Bebinca de Batata is one of the types of bebinca that is not baked in layers. Bebinca is a tribute to the culinary creativity of Goans. Many Goans also call this bebinca as 'mock' bebinca.

Ingredients

  • 500 grams Potatoes
  • 450 grams Granulated white sugar
  • 4 large Eggs
  • 1/4 tsp Salt
  • 1 cup Thick coconut milk
  • 150 grams All-Purpose Flour
  • 1 tsp cardamom powder
  • 2 tbsp Ghee (clarified butter)

Instructions

  • 1 Boil the potatoes and peel them.
  • 2 Mash the potatoes, Add the sugar and stir well.
  • 3 Next, add the eggs one by one beating well after each addition. Add the salt and cardamom powder.
  • 4 Stir in the coconut milk.
  • 5 Sift in the flour. Mix well.
  • 6 You will get a pancake consistency batter. Preheat oven at 325 deg F.
  • 7 On the gas burner, heat a baking tray (I used 8 inch square pan ) , add 2 tbsp ghee. Let the ghee melt.
  • 8 Pour the bebinca batter into the tray. Let it cook on the gas on LOW heat for 5 minutes for batter to thicken a bit.
  • 9 Transfer the tray into preheated oven. Bake for 1 hour. Insert a toothpick or skewer to see if done . Bake for more time till skewer comes almost clean (it won’t come very clean as it’s potato mixture ) It should not be wobbly . Let it cool completely in baking tin itself.
  • 10 Unmold it. Cut.
  • 11 Serve! Enjoy!!!
