Goan Beef Roast

Roast meat is an all time Goan favorite. This is a super moist, perfectly seasoned, traditional Goan tender roast beef recipe that has passed down generations in our family. Roast meat can be enjoyed with cooked potatoes, french fries, along with a salad or as a sandwich. Beef chilly fry can also be prepared using this roast meat.

For the Roast Masala:-
  • 1/2 tsp Black Peppercorns (about 10-12 peppercorns )
  • 1 tsp Cumin seeds
  • 1/2 tsp cloves (about 10-12 cloves)
  • 2 inch Cinnamon stick
  • 1 tsp turmeric powder
  • 1 1/2 - 2 inch Ginger Piece (roughly chopped)
  • 8-10 Garlic cloves (roughly chopped)
  • 1-2 large Onion (roughly chopped, use 2 if you need more gravy)
  • 5 tbsp Vinegar
  • 1 tsp Salt
Other Ingredients:-
  • 1 Kilograms Beef chunk
  • 1 large Onion (Sliced)
  • 4 Dry Kashmiri chilies
  • 4 tbsp Oil
  • Salt (as per taste )


  • 1 Wash the beef chunk .Pat dry with paper towel.
  • 2 Cut the meat into 4-5 large pieces.
  • 3 Grind all the ingredients mentioned under 'For the Roast Masala' into a fine paste and apply it to the meat pieces. Cover the bowl with cling film and marinate for at least 1 hour (I marinated overnight in the refrigerator).
  • 4 In a vessel, add the oil. Take the meat cubes and fry them on high flame . (Reserve the marinade).
  • 5 Fry them on all sides till browned, for about 4 minutes. (This is done to lock in the meat juices)
  • 6 Add in the marinade, about 1 1/2- 2 cup water, onion and the kashmiri chilies.
  • 7 Cover and cook on low to medium heat for 45 minutes to an hour. (Turn the meat pieces after every 10 minutes). Add more salt if needed. Let the meat cool completely before slicing it.
  • 8 Slice, serve and enjoy the roast meat. Use the roast meat to make chilly fry , sandwiches. (See recipe notes below for roast meat sandwich recipe link).
