Bhindi Masala Fry (Okra)

A simple recipe that uses Indian Spice powders , stuffed in okras and then sauteed along with carom seeds. Goes well with rice, plain masoor dal and papad.

Ingredients

For the Masala Stuffing:-
  • 1 1/2 tsp turmeric powder
  • 3 tsp red chili powder
  • 1/2 tsp Cumin powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Dry mango powder (Aamchur powder)
  • 1 tsp Chaat masala
  • 1/2 tsp Salt
Other Ingredients:-
  • 20 Okras /Ladyfingers/ Bhindi
  • 1 tbsp Oil
  • 1/2 tsp Carom seeds (or cumin seeds if you don't like the taste of carom seeds)
  • 1/4 tsp turmeric powder
  • 1/4 tsp Salt (or as per taste)

Instructions

  • 1 Wash , pat dry and cut the top and bottom edges of the okras. Mix all the ingredients under 'For the Masala Stuffing' together.
  • 2 Make slits vertically along the okras. Lightly stuff in the prepared masala powder mixture in the slits of okra. Cut each okra into 3 pieces.
  • 3 In a pan, add oil. Crush the carom seeds between palms of your hands(so that the aroma of carom seeds can be released). Add them to the oil along with turmeric powder.
  • 4 After few seconds, add the stuffed okras. Sprinkle some salt as required.
  • 5 Fry them turning continuously on all sides till done.
  • 6 Serve them along with a simple dal (as the okras will be spicy) and chapatis. (See recipe notes below for dal recipe).
