Blueberry Streusel Cake

White soft butter cake with fresh blueberries, and a crunchy streusel, are simply irresistible. Serve this cake warm from the oven or at room temperature.

Ingredients

For the Streusel Topping:-
  • 4 tbsp Butter (chilled)
  • 1/4 cup All-pupose flour
  • 1/4 cup Granulated white sugar
For the Cake Batter:-
  • 1/2 cup Butter (room temperature)
  • 1/2 cup Granulated white sugar
  • 2 Eggs (room temperature)
  • 1 tsp Vanilla extract
  • 1 1/4 cup All-pupose flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Milk
  • 2 cup Fresh Blueberries

Instructions

Prepare the Streusel Topping:-
  • 1 In a bowl, mix together the flour and sugar. Cut the chilled butter into pieces and mix it into the flour mixture.
  • 2 Using your hands, rub the butter well into the flour mixture. It should be a rough coarse mixture. Leave this streusel topping aside.
Prepare the Cake Batter:-
  • 3 Preheat oven at 350 deg F(180 deg C). In a bowl, beat butter and sugar till fluffy. Add in the egg. Mix well. Add the vanilla essence.
  • 4 Sift in the flour along with baking powder and salt. Fold the flour in butter mixture alternating with milk.
  • 5 Spread the batter onto the bottom of the prepared pan, smoothing the top with the back of a spoon.
  • 6 Evenly arrange the blueberries on top of the cake batter.
  • 7 Sprinkle with the streusel topping.
  • 8 Bake for 40 minutes until skewer or toothpick inserted in cake comes out cleaning. The streusel should have a lovely light brown color. Remove from oven, let it cool for 30 minutes.
  • 9 Remove the parchment paper.
  • 10 Cut the cake into desired pieces.
  • 11 Serve ! This cake can be serve warm or chilled. Chilled cake makes the streusel topping to be crunchy.
