Cabbage Foogath

A favorite and a staple vegetable of every Goan is the Cabbage Foogath or also known as fugad de repolho. A very simple, comforting, easy to make recipe and yet as tasty as the flavors of cabbage and coconut blend so well!

Ingredients

  • 2 tbsp Oil
  • 1 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 2 Onions (Sliced)
  • 6 Garlic cloves (finely chopped)
  • 3 Dry Kashmiri chilies
  • 1/2 Cabbage (Finely sliced or cut)
  • 2 Green chillies (chopped, optional )
  • 1/4 cup Freshly grated coconut
  • 1/2 tsp Salt
  • Pinch Granulated white sugar

Instructions

  • 1 Heat oil in a pan, add mustard seeds. Allow them to splutter. Next, add the cumin seeds, allow them to sizzle. Add the garlic and red chilies. Next add onion, fry till onion is soft.
  • 2 Add cabbage, green chilies, sugar and salt. Sprinkle some water (3-4 tbsp only). Cover the pan and cook till cabbage is done.
  • 3 Add coconut and cook further for another few minutes.
  • 4 Serve as a side dish along with rice or just with rotis.
