Chouriço Pão (Goan Sausage Bread)

Goan Sausages are a delicacy, these are cooked and eaten with rice or stuffed in goan pao (breads), or cooked as a chilly fry or used in making sausage pulao. Chouriço Pão, is a Goan Sausage Bread where sausage meat is precooked, a bread dough is prepared and cooked meat is stuffed in the breads and baked to perfection. I hope you will love this recipe.

Ingredients

For the Dough:-
  • 2 cup All-Purpose Flour
  • 2 Tsp Instant Yeast (see recipe notes below)
  • 1 tsp Salt
  • 1 tbsp sugar
  • 4 tbsp Butter
  • 1 Egg
  • Milk (as required to knead the dough (see notes below))
For the Stuffing :-
  • Goan Sausage Chilly fry (see recipe notes below for Chilly Fry Recipe,1/2 portion of recipe)
For the Top Glazing of Bread :-
  • 1 Egg (mix with 2 tbsp milk (for brushing bread top))
  • 1 tbsp Sesame seeds
  • 1 tbsp Butter (for brushing bread top)

Instructions

  • 1 Keep ingredients ready.
  • 2 Mix together all-purpose flour, salt, sugar, 4 tbsp butter, yeast and 1 egg with sufficient WARM milk to form a sticky dough.
  • 3 Keep the dough in an oiled bowl. Cover bowl with a cloth and keep bowl in a dark warm place for at least 1 hour for fermentation. (I keep in oven or microwave)
  • 4 After 1 hour you will see the dough has doubled in size.
  • 5 Place the dough on kitchen slab and give light punch to dough to remove air from it.
  • 6 Divide dough into 8 portions and form balls. Flatten each ball using your hands or rolling pin, stuff enough sausage chilly fry in it. (See Recipe notes below)
  • 7 Tuck the edges upwards together and seal tightly to foam a ball.
  • 8 Place these breads on a greased and flour dusted baking tray.(Place breads keeping sealed side on the tray)
  • 9 After 45 mins you will see the breads have increased in size. Preheat oven at 425 deg F (225 deg C). Brush the top of breads with egg and milk mixture and sprinkle sesame seeds over it. Bake for 8-10 mins till top of breads turn nice and brown.
  • 10 Bake for 8-10 mins till top of breads turn nice and brown.
  • 11 Place the breads on a cloth and brush top of breads with some melted butter and keep them covered in a cloth for at least 15 mins or just before serving them.
  • 12 Chouriço Pão are now ready! Serve them warm... Enjoy!!!

Recipe Notes

  1. If you are using dry yeast, then mix yeast with the amount of sugar mentioned in recipe, 1/4 cup warm milk and leave it aside to ferment for 15 mins. Then use the yeast while kneading the dough.
  2. Don’t use hot milk or hot water in the yeast or while kneading dough, as hot temperature causes to kill the yeast.

  4. Before baking, you can use milk to brush on top of breads but egg yolk gives a nice shine on the breads while milk brushed top will make them look dull.
  5. Keep the breads covered in cloth once baked to keep them soft.
  6. You can use full milk or half milk and water to knead the dough.
