Cocada (Kokad)

Cocada or also known as Kokad is a Christmas sweet prepared in Goa with fine semolina and coconut. Originally its white in color but I added green and red color to this sweet to give it a Christmas look. Requires continuous stirring, but worth the effort!

Ingredients

  • 3 1/2 cup Granulated white sugar
  • 1 1/2 cup Rava (fine semolina)
  • 1 cup Coconut (fresh or desiccated)
  • 6 Cardamom (crush the seeds into powder)
  • Liquid food colors (optional)

Instructions

  • 1 In a pan, add 1 and 1/2 cup water along with the sugar and cardamom powder. Bring it to a boil and keep cooking till a thick syrup is formed.
  • 2 Now, add the rava and the coconut.
  • 3 Mix well. Cook till the mixture starts to leave sides of pan.
  • 4 Add food color if desired.
  • 5 Remove mixture on a flat greased (with butter) over a plate, flatten it to desired thickness. After 3-5 minutes while the mixture is still hot, cut into pieces.
  • 6 Store in an airtight container and serve as required. (See recipe notes below ) .

Recipe Notes

If your mixture starts to get a bit dry ( before transferring it on a plate ) , then add little more water and cook for 2 minutes or so .
