Caramel Pudding

Caramel Pudding or Crème Caramel is a milk and egg dessert with a layer of soft caramel on top. This recipe shows the baked version of Caramel Pudding. It’s an elegant and absolutely delicious dessert. Very common and popular dessert in Goa. This dessert can also be steamed.

Ingredients

For the Caramel:-
  • 4 tbsp Granulated white sugar
  • 2 tbsp Water
For the Milk & Egg Mixture:-
  • 400 grams Condensed milk ((One tin))
  • 6 Eggs (6 regular sized eggs or 5 LARGE eggs )
  • 1/2 litre Milk
  • 1/4 tsp Freshly grated nutmeg powder (or 1 tsp Vanilla essence )

Instructions

Preparation of caramel:-
  • 1 In a small skillet, add sugar and water. Cook over medium-high, swirling occasionally, until caramel begins to turn amber, 6 to 8 minutes.
  • 2 Pour caramel quickly into the custard mold. Keep it aside.
Preparation of Milk & Egg Mixture:-
  • 3 Preheat oven at 180 deg C (350 deg F) In a whisking bowl, add the eggs and vanilla extract. Beat the eggs well.
  • 4 Add the condensed milk. Beat well again.
  • 5 Mix in the milk. Strain the mixture (for any egg residue).
  • 6 Pour the prepared egg and milk mixture into the caramel mold.
  • 7 Place the mold in water bath and bake it for 35-40 mins.
  • 8 Cool completely at room temperature. Chill it in refrigerator for about 2 hours or overnight.
  • 9 Unmold the pudding.
  • 10 Serve! Enjoy !!!
