FOFOS (Fish Rolls)

‘FOFOS’ originally known as ‘Fofos De Bacalhau’ (Cod Fish Rolls) that are made from salted dry cod fish. Since bacalhau is not available in India , Goans have adapted this recipe to boneless fish or prawns/shrimps.

Ingredients

  • 1 Egg
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4 tbsp Cheddar cheese (grated)
  • 2 Medium sized Potatoes (boiled, peeled and mashed (or grated))
  • 1 medium sized Onion (finely chopped)
  • 2 six-inch sized Fish Fillets or 200 grams Bacalhau or 1 cup Prawns (See Recipe Notes below if using Bacalhau)
  • 2 Cloves of garlic (finely chopped)
  • 1 Green chili (chopped, do not use for kids)
  • 3 tbsp Rice flour
  • Breadcrumbs (as required)
  • Oil (for deep frying)

Instructions

  • 1 In a bowl, add egg. Beat well. Next, add salt and pepper.
  • 2 Add mashed/grated potatoes. Mix well.
  • 3 I have used these fish fillets (chop them in a chopper or just cut them finely).
  • 4 Add onion and chopped fish.
  • 5 Next and green chili, rice flour, cheese and garlic. Mix well. The mixture will be sticky.
  • 6 Take sufficient amount of the mixture, and drop it in the breadcrumbs.
  • 7 With the help of breadcrumbs, form into rolls/croquettes. (These rolls have to be a little longer and bigger than normal croquette size).
  • 8 Deep fry them on medium heat.
  • 9 Fry till golden brown.
  • 10 Serve hot with any spicy red ketchup.
  • 11 Enjoy every bite of it!

Recipe Notes

If using Bacalhau (Salted Cod Fish):-

  1. Soak bacalhau overnight.
  2. Boil for 10 minutes..
  3. Remove the skin and bones. Then mince it.
  4. Use this minced bacalhau in above recipe.(Please check the salt levels here, add salt IF REQUIRED in case of salted cod.)
OR
  1. Mash potatoes, minced bacalhau, egg and onion. Mix well. Form rolls and deep fry.
