Gingerbread Men Cookies

Gingerbread Men Cookies are Ginger flavored cookies prepared specially during the Christmas / holiday season. Kids enjoy making them (rolling and cutting out cookies ). Do give it a try !

Ingredients

For the Cookie Dough:-
  • 3 cups All-Purpose Flour ((Maida flour))
  • 2 tsp Ground Ginger (Ginger powder)
  • 2 tsp Ground Cinnamon
  • 1 tsp Baking Soda
  • 1/2 tsp Ground Cloves
  • 1/2 tsp Salt
  • 1 1/2 cups Unsalted Butter (At room temperature)
  • 1 cup Brown Sugar
  • 1/4 cup Molasses
  • 1 Egg (At room temperature)
For the Icing:-
  • 1/4 cup Icing sugar ((Confectioners sugar))
  • 1 Egg white (Beaten)
  • Food colors (Red and green(Liquid colors))

Instructions

  • 1 Beat butter and sugar till light and fluffy. Add the molasses.
  • 2 Add the egg and beat well. Mix in the flour along with the spice powders and salt.
  • 3 Mix well till a nice dough is formed. (The dough will be sticky) Cover dough in a cling film and refrigerate it for at least an hour.
  • 4 Divide dough into 2 parts. Place one part of dough on flour dusted parchment paper.
  • 5 Place another parchment on top of dough. Roll it out.
  • 6 Using gingerbread man cookie cutter, dip it in flour and cut along. Place gingerbread men on baking tray lined with parchment paper.
  • 7 Preheat oven at 350 deg F(176 deg C). Bake for 8-10 mins. Cool completely on a wire rack.
  • 8 Icing the gingerbread men:- Mix icing sugar , egg white with sufficient water to from a cookie icing. Add required color. Ice the cookies. Leave them to dry completely. Store in air tight container.
  • 9 These Gingerbread men look cute on the Christmas tree as well! Don’t they??? (See recipe notes below ) .

Recipe Notes

  1. The longer you keep the cookie dough to chill, the easier it is to work with.
  2. Make sure to dip the cookie cutter in flour every time you use it for neater cookie edges.
  3. Thinner the cookie dough is rolled out, the crunchier they turn out to be.
  4. Icing is optional.
  5. Since I’m getting a lot of queries regarding substitute for molasses ... honey happens to be an option here but preferably try and use molasses. (I have not tried this recipe with honey) . Along with 1/4 cup honey , use about 2-3 tbsp dark sugar caramel.
  6. Molasses can be found at stores selling baking products or you can find it online.
