Beef Rolad (Goan Beef Rolls)

A classic Goan recipe where thin slices of beef are tenderized, marinated with spices and then stuffed with veggies along with pork fat or Goan chourico and cooked over a bed of onion and tomato base.

Ingredients

For the Masala Paste:-
  • 1 tsp Cumin seeds
  • 2 inch Cinnamon stick
  • 12 cloves
  • 1 tsp Black Pepper Cons
  • 1 incg Ginger Piece
  • 8 cloves garlic
  • 1 tbsp turmeric powder
  • 6 Dry Kashmiri chilies
  • 2 Red chilies (any spicy, byadgi will do)
  • 1 tsp Salt (as per taste)
  • Vinegar (as required to grind the paste)
For the Rolls:-
  • 1/2 kilograms Tenderloin ( (Slice it thin, cut into 2” X 3” pieces,about 25 pieces))
  • Potato (cut into strips)
  • Carrot (cut into strips)
  • capsicum strips (optional)
  • Pork fat strips or Goan sausage pieces
Other ingredients:-
  • 6 tbsp Oil
  • 4 large Onions ( Sliced)
  • 6 medium sized Tomatoes ( Sliced)
  • 3 Green chilies (slit , optional(for less spicy don't use))
  • 2 tsp Salt

Instructions

  • 1 Flatten the beef pieces with a meat tenderizer (tool) to tenderize the meat.
  • 2 Grind the masala using vinegar into fine paste and apply to the meat slices and marinate for about 30 mins.
  • 3 Assemble the rolls by placing a strip each of the carrot, fat, potato and capsicum strip(if using) on a beef slice. Roll up tightly and keep them rolled up with the help of a toothpick. (Or sometimes we also use string ti tie them up).
  • 4 In a pan, add 4 tbsp oil. Add the onions, fry till soft and translucent. Add the tomatoes and cook for about 5-7 mins till nice and soft. Add the salt. Add green chilies.
  • 5 Place the rolls over the onion and tomato mix. Add 1 cup water and cover the pan.
  • 6 Cook for next 30 mins till the gravy dries up.
  • 7 Remove the toothpicks (or string if used) before serving the rolls. Enjoy!
