Goan French Bean (French Bean Foogath)

French Bean Foogath is simple, easy, mildly spiced and healthy. Foogath is almost an everyday preparation in Goa, a side dish during lunch time along with fish, curry and rice.

Ingredients

  • 3 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 8 Fresh Curry leaves
  • 2 Dry Kashmiri Chillies (break into 4 pieces)
  • 1 medium sized Onion (Sliced)
  • 250 grams French Beans (cut into ½ inch pieces, or as desired)
  • 6 Dry Kokum
  • 2 Green chilies (Chopped)
  • 4 tbsp Freshly grated coconut
  • 1 tsp Salt

Instructions

  • 1 In a skillet, add oil. Add mustard seeds, allow them to splutter. Next, add garlic, red chilies and curry leaves. Fry for 30 seconds.
  • 2 Fry the onion till soft.Add the French beans and the salt along with kokum. Sprinkle 4 tbsp water. Cover pan with lid and cook for 10 minutes.
  • 3 Add the coconut and green chillies, cover and cook for further 5 minutes. Adjust salt.
  • 4 Serve as a side dish along with fish curry and rice. (See Recipe Notes below)
