Goan Pulao with Green Peas

Flavored with cardamom, cloves and other spices, this rice has a very simple flavor but yet a very good taste. No Sundays, weddings, feasts or other occasions in Goa are complete without the Goan Pulao. This recipe uses a pressure cooker to cook and hence makes cooking easy and faster.

Ingredients

  • 6 tbsp Oil
  • 5 cloves
  • 6 Peppercorns
  • 1 inch Cinnamon stick
  • 3 Cardamom
  • 1 Bay leaf
  • 1 large Onion (chopped)
  • 2 medium sized Tomatoes (chopped)
  • 1/2 tsp turmeric powder
  • 1/2 cup Green Peas
  • 1 tsp Salt
  • 1 cup Rice (Basmati Rice)
  • 1 3/4 cup Broth ( veg, chicken or beef (See Recipe notes below))

Instructions

  • 1 Keep ingredients ready.
  • 2 Wash the basmati rice and keep aside. In a pressure cooker, add the oil and the spices along with bay leaf.
  • 3 Add the onion and fry till nice and soft.
  • 4 Add tomatoes and cook till soft and mushy.
  • 5 Add the greens peas , turmeric and cook for 2 mins.
  • 6 Add the rice and fry for 2 mins. Add the broth. Close the pressure cooker. Cook on HIGH for ONE whistle. Keep aside till the pressure is released.
  • 7 Pulao is ready. Take a fork and mix the rice and loosen it carefully. Make sure not to break the rice grains.
  • 8 Goan pulao goes well with Goan Sausage chilly fry or Xacuti. (See Recipe Notes below). Enjoy!

Recipe Notes

  1. You can skip the green peas and make a plain pulao.
  2. This pulao goes well with beef, mutton or chicken Xacuti or even Goan sausage chilly fry.
  3. You can make the broth by adding one chicken or beef bouillon cube or 2 Maggie cubes in 1 ¾ cups hot water. Adding beef or chicken broth makes the pulao Non-Veg.
  4. If you are not using a pressure cooker to cook , then use a utensil with a lid and use 2 cups broth instead of 1 ¾ cups. Cook the pulao on low flame keeping the utensil covered all the time till the broth dries up and the rice is cooked.
