Godda Koiloreo

Koiloreo, is a Goan pancake usually had at breakfast time. It is prepared by grinding local rice (ukdde tandool) that has been soaked overnight, but this is an easier version using rice flour which can be done instantly. Originally its kept simple, but this recipe uses Goan palm jaggery as well. Hence called as Godda (Godd refers to jaggery).

Ingredients

  • 1 cup Rice flour
  • 1 Egg (beaten)
  • 1/2 tsp Salt
  • 1/3 Grated fresh coconut
  • 1/3 cup Goan Palm jaggery (cut into small pieces)
  • Ghee (as required to make the koiloreo)

Instructions

  • 1 Mix rice flour, egg, salt, coconut and jaggery in a bowl.
  • 2 Mix well.
  • 3 Add sufficient water to get a pancake consistency batter.
  • 4 Heat a 6-inch skillet. apply some ghee to it. Pour sufficient batter to spread the batter to coat the pan. Cover pan and cook for about 2-3 minutes on medium low flame. (No need to flip on other side).
  • 5 Repeat the process for remaining batter. Enjoy !

Recipe Notes

  1. Tastes best when served immediately. (from pan to the plate).
  2. For richer and yummy koiloreo, substitute coconut milk instead of water while preparing the batter.
