Jalebi

Jalebi is a hot favorite on any special occasion be it a birthday, wedding or festival. It is made by deep-frying a flour batter in circular shapes, which are then soaked in sugar syrup. Jalebis are served warm or cold but tastes best when warm.

Ingredients

For batter:-
  • 100 grams All-Purpose Flour
  • 30 grams Cornflour
  • 4 tbsp Curds
  • 1 tsp Orange/yellow color
  • 1 tbsp Hot oil
For syrup:-
  • 1 cup Granulated white sugar
  • 1 cup Water
  • 4 threads saffron, or 4-5 drops of yellow food coloring

Instructions

  • 1 Make a sugar syrup using sugar, water and saffron till it reaches jalebi syrup kind consistency.
  • 2 In a bowl, add flour, corn flour, hot oil, curds and enough water to make a thick pancake type batter. Finally, add the food coloring to achieve a golden yellow color. (or just keep it white , don't add color). Cover the bowl and leave the batter to ferment in a warm place for 12 hours or overnight. The batter will rise and become noticeably fluffier than it was the night before. It is now ready to use.
  • 3 Whisk fermented batter and pour in plastic bag to form cone and cut a small hole in bag and drizzle in a circular motion in hot oil to form jalebis. (I used a icing metal nozzle)
  • 4 Turn the jalebis and fry till slightly browned.
  • 5 Soak jalebis in hot sugar syrup for 10 mins.
  • 6 Remove jalebis from syrup and serve them warm!
