Koiloreo

Koiloreo, also known as koilodde or koilori, is a Goan pancake usually had at breakfast time. It is done grinding local rice that has been soaked overnight, but mine is an easier version using rice flour which can be done instantly.

Ingredients

  • 1 cup Rice flour
  • 1 Egg
  • 1/3 cup Grated fresh coconut
  • 1/2 tsp Salt
  • Water (Or Milk as required, see recipe notes below)
  • Ghee (As required)
  • 1 tbsp sugar (Optional,for sweet koiloreo)

Instructions

  • 1 Keep ingredients ready. In a bowl, add rice flour, egg, coconut, salt and sugar. Mix well.
  • 2 Add water and mix well till here are no flour lumps remaining in the batter. Batter should resemble pancake batter.
  • 3 Grease a pan with ghee (about 6 inch pan size). Pour sufficient batter to coat pan.
  • 4 Cover pan with lid and cook for 2 mins. Repeat process till all batter is used.
  • 5 Enjoy at tea time!

Recipe Notes

  1. Tastes best when served immediately.
  2. Can be served with honey or a chocolate spread for kids.
  3. To make a sweeter version of koiloreo, add 1 tbsp sugar in the batter.
  4. For richer and yummy koiloreo, substitute coconut milk instead of water while preparing the batter.
