Lady Fingers Sukka (Okra)

Ladyfinger Sukka is a quick and simple yet tasty dry okra dish served usually in Goa as a side dish with rice and curry.

Ingredients

  • 1/2 tsp Cumin seeds
  • 8 Fresh Curry leaves
  • 1 medium sized Onions (sliced)
  • 2 Green chillies (chopped)
  • 20 Lady fingers (thinly sliced diagonally)
  • 1/2 tsp turmeric powder
  • 4 tbsp Freshly grated coconut
  • 2 tbsp Oil
  • 1 tsp Salt

Instructions

  • 1 In a skillet, add oil. Add the cumin seeds and allow them to sizzle. Once done, add the curry leaves, onions and green chilies. Fry till onion turns soft.
  • 2 Next, fry in the coconut and turmeric powder for 2-3 minutes.
  • 3 Add the okras, add 4 tbsp water,salt. Cover skillet with lid. Cook for 5-7 minutes till okra are cooked.
  • 4 Serve along with rice and curry.
