Lima Beans with Potatoes

Lima beans, also known as Butter beans are a very good source of dietary fiber and a fat free source of protein. This make a very good and delicious Indian flavored spicy and tangy dish. Can be enjoyed with rotis or served as a side dish along with rice.

Ingredients

  • 2 tbsp Oil
  • 1/2 tsp Cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1 1/2 cup Lima Beans (I used frozen)
  • 2 medium sized Potatoes (peeled and cubed)
  • 1 1/2 tsp Salt
  • 1/2 tsp amchur powder (dry mango powder)
  • 1 tsp Chaat powder
  • 1 tsp Dry Kasuri Meethi leaves (Fenugreek leaves)

Instructions

  • 1 Add oil in a pan. Add the cumin seeds, allow them to splutter. Add the turmeric, chilly, cumin and coriander powder. Stir fry for a minute.
  • 2 Add the potatoes, lima beans and salt along with one cup water. Cover pan with lid and cook for 15 mins.
  • 3 Add chaat masala and amchur powder. Cook till gravy thickens.
  • 4 Crush Kasuri meethi leaves with your palms and add to the dish. Cook for another 2 mins. Serve hot with rotis.
