Mango, Nuts & Potato Bhaji with Spinach Puris

My other Innovation for a Challenge. Accepting the challenge with given five ingredients in the Mystery Box- Mango, Red Chilies, Jaggery, Spinach and Cashew nuts... had to come up with an innovative dish that's Goan with a twist. This time I gave a twist to the Goan Favorite Breakfast "BHAJI PURI" , gave a twist making spinach puris and to the potato bhaji I added semi ripe mango bits,chopped spinach, chili flakes and cashewnuts.

Ingredients

  • 4 tbsp Oil
  • 1 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1 large Onion (sliced)
  • 2 large Potatoes (boiled, peeled and cubed)
  • 1/4 tsp turmeric powder
  • 1 inch Ginger (cut into fine pieces)
  • 1/4 cup Spinach (chopped)
  • 1/2 tsp Red chili flakes
  • 4 tbsp Cashew nut
  • Spinach Puris (See recipe notes below for recipe link)

Instructions

  • 1 Given 5 ingredients.
  • 2 My ingredients are ready.
  • 3 In a skillet, add oil, add mustard. allow them to splutter. Add cumin seeds, allow them to sizzle. Fry onion till soft.
  • 4 Add cashewnuts and spinach .Mix well.
  • 5 Add turmeric powder, mangoes, chili flakes, potatoes and ginger bits.
  • 6 Mix well. Bhaji is ready.
  • 7 Prepare the Spinach puris, see recipe notes below for recipe link.
  • 8 Enjoy the bhaji puri!!!
