Mango Pancakes

Another innovation in my kitchen. One morning while preparing pancakes for my kid, I thought to myself... why not try mango pancakes ? ...As I had a lot of mangoes lying at home. So the Indian mango shrikhand flavors came to my mind. That was my inspiration. Then I decided to serve these mango pancakes along with milk cream and a little yoghurt, flavored with kesar(saffron), cardamom, some pistachios and almonds. You see the results ... it worked very well . Do give it a try .

Ingredients

For the Pancake Batter:-
  • 1/2 cup All-Purpose Flour
  • 2 tbsp Granulated white sugar
  • 1/8 tsp Baking powder
  • 1/8 tsp Salt
  • 1/2 Egg
  • 1/2 Mango
  • Milk (as required to make batter)
For the Crème:-
  • 1/4 cup Heavy whipping cream
  • 1 tbsp Curd, yoghurt
  • 1 tbsp Confectioners or icing sugar
  • cardamom powder (add as per your taste)
  • 2-3 strands Saffron (Kesar)
  • Pistachios and almonds (chopped , to serve)
Other Ingredients:-
  • Butter (to fry the panckes)

Instructions

Prepare the Crème:-
  • 1 Add Heavy whipping cream, curd, Confectioners or icing sugar, Cardamom powder and Saffron in a mixing bowl.
  • 2 Whip it till stiff peaks are formed. Refrigerate it while you make the pancakes.
Prepare the Pancakes:-
  • 3 In a blender, make mango puree.
  • 4 Add rest of the ingredients along with milk to make a pancake consistency batter.
  • 5 Heat a pan, add butter. Pour pancake butter in shape of mango.
  • 6 Once you notice bubbles appearing on top of pancakes, flip them on other side.
  • 7 Stack pancakes one over the other (as many as you wish) and serve with the chilled creme.
  • 8 Enjoy !
