Medu Vada

Medu Vadas are a traditional South Indian crispy snack which are mostly served for breakfast.

Ingredients

  • 1 cup Urad dal (Split white lentils)
  • 2 Peppercorns
  • 1 Green chillies (roughly chopped)
  • 8 Curry leaves
  • 1 tsp Ginger (chopped)
  • Salt (As per taste)
  • Oil ( for deep-frying)

Instructions

  • 1 Wash and soak the urad dal in enough water over night or for at least 2 hours.. Grind together the rad dal (drained), peppercorns, green chili, curry leaves, ginger and salt to form a thick paste. Make 10 equal portions.
  • 2 Take a portion of the mixture in your hand and make a hole in the center with your thumb. Heat oil in a deep frying pan drop the vada in oil. Deep fry the vada till both sides turn golden brown in color.
  • 3 Drain on absorbent paper. Serve hot with Peanut chutney. (See Recipe notes below)
