Nankhatai (Recipe-II)

Nankhatai is a Eggless sweet cookie that are crumbly, soft spiced with cardamom that can be easily prepared at home. Nankhatai are a famous Goan Christmas sweet distributed as goodies. You will find nankhatai in most of the local bakeries in Goa. You can prepare nankhatai any time of the year.

Ingredients

  • 1/2 cup Ghee (clarified butter / preferably use Vanaspati)
  • 1/2 cup sugar (powdered)
  • 1/4 cup Gram flour (besan flour)
  • 1/4 cup Rawa (fine)
  • 1/2 cup All-pupose flour
  • 1/2 tsp Baking powder
  • 1/2 tsp cardamom powder
  • 12 pieces Cashew nuts halved

Instructions

  • 1 Mix all the dry ingredients in a bowl (not the cashew nuts) . Keep aside.
  • 2 In a bowl, add sugar and ghee. Beat till light and fluffy.
  • 3 Mix the dry ingredients.
  • 4 Make a dough. Cover dough and keep aside for 10 minutes. Preheat oven at 200 deg c.
  • 5 Make into 10-12 balls and slightly flatten them on a baking tray.
  • 6 Bake for about 10-12 minutes. Remove tray from oven and leave cookies on baking tray for 5 minutes before you can transfer them on cooling rack. Cool completely on wire rack.
  • 7 Serve and enjoy the nankhatai!
