Phenori

Phenori is a sugar coated flaky, layered and crispy snack / sweet that's traditionally made in most Goan Hindu households. Looks very complicated but very simple to make. Try them out this Ganesh Chaturti festival and i'm sure this will be a hit in your family.

Ingredients

For the Phenori Dough:-
  • 1 cup All-Purpose Flour
  • 1/2 tsp Salt
  • 2 tbsp Ghee (vanaspati/ I have used unsalted butter)
  • 1/4 cup Confectioners or icing sugar (or use powdered sugar)
  • Ghee or Oil (for deep frying)
For the Flour Paste:-
  • 2 tbsp All-Purpose Flour
  • 3 tbsp Ghee (vanaspati/ I have used unsalted butter)

Instructions

Prepare the Phenori Dough and sheets:-
  • 1 Add all the ingredients mentioned under 'For the Phenori Dough' in a bowl. (leave the ghee / oil for deep frying aside). Using about 3- 4 tbsp water knead a hard dough. (Should NOT be soft like a chapati dough). Cover the dough and keep aside for 30 minutes.
  • 2 After 30 minutes, divide the dough into 6 portions.
  • 3 Roll them out as thin as possible(About 7-8 inch in size). Keep them aside.
Prepare the Flour Paste:-
  • 4 In a small bowl, mix the flour and butter.
  • 5 Keep mixing it with a spoon till nice and fluffy.
Assemble and Deep fry:-
  • 6 Now, take a chapati, apply about 1 tsp of flour paste on it and spread it all over the chapati.
  • 7 Then, place 2nd chapati over the 1st chapati and repeat the process.
  • 8 Apply the flour paste over the 6th chapati as well.
  • 9 Now, roll the thick chapati , tightly and carefully.
  • 10 Cut the roll into 1/2 inch sized portions.(You will get about 10 pieces, cut the end portions).
  • 11 Take each piece, and keep it in a manner so that you can see the layers. Slightly slant and press it so that the layer part is visible. Do this for all the pieces.
  • 12 Take the rolling pin and slight roll each of the pieces lengthwise only.
  • 13 Deep fry them.
  • 14 Once they float on the oil, flip and fry on other side.
  • 15 Fry till you get a nice golden brown color. Drain them on paper absorbent towel.
  • 16 While still hot, sprinkle icing sugar over them. Let them cool completely.
  • 17 Dust icing sugar (more icing sugar if required) and serve.
  • 18 Enjoy these crispy and flaky beauties!!!
