Rice Kheer

A quick Indian dessert made with leftover rice. I usually do this with left over rice. Good for kids who are fussy about eating dry fruits and nuts!!!

Ingredients

  • 3/4 cup Rice (cooked)
  • 1 1/2- 2 cup Milk
  • 8 Almonds (chopped)
  • 12 Raisins
  • 8 Cashewnuts (chopped)
  • 4 tsp Granulated white sugar
  • Pinch Salt
  • 2 Green Cardomom (Seeds crushed)
  • 2 strands Kesar (optional)

Instructions

  • 1 In a vessel, put the milk, raisins, nuts, sugar, salt, rice.
  • 2 Bring it to a boil. Add the kesar strands if using. Mash the rice slightly with a ladle.
  • 3 Cook for 15-20 minutes on medium low flame till the mixture thickens. Keep stirring in between.
  • 4 Add the crushed cardamom. Serve warm or chilled.
