Rich Chocolate Fudge (Microwave)

Fudge is prepared in Goan homes during Christmas. Usually itโ€™s a long procedure by stirring the mixture over gas stove and takes almost and hour or so ! Try this easy 2 minute microwave recipe with just 2 key ingredients!!! This was a hit among my friends here last Christmas...

Ingredients

  • 400 Grams Sweetened Condensed Milk (1 tin )
  • 525 Grams Dark Chocolate chips (See notes below )
  • 1 Tbsp Butter (And extra for greasing pan)
  • Mint chocolate chips (for garnish,optional)

Instructions

  • 1 Keep ingredients ready.
  • 2 Pour the condensed milk in a microwave safe bowl. Add the Chocolate chips.
  • 3 Mix well. Microwave HIGH for one minute.
  • 4 Mix thoroughly till the chocolate chips are completely melted. Microwave for another minute , add 1 tbsp butter ( if using ) mix well until fudge mixture turns out into a thick paste.
  • 5 Line a 8 inch square pan with aluminum foil and grease the aluminum foil with butter. Pour fudge mixture into pan, decorate as required. (Optional) Refrigerate for at least 2 hours.
  • 6 Cut into desired pieces. (I get about 49 decent sized pieces) . Keep refrigerated until its time to serve.

Recipe Notes

  1. If you donโ€™t want to use a microwave , then place the ingredients in a bowl . Cover with foil and keep it over another pan/ bowl with water over cooking stove. The chocolate bowl should not touch the water in the pan below. Make sure that the chocolate gets fully melted. (Double boiler method) .
  2. I get about 49 decent sized pieces . You can cut them into desired size.
  3. If you donโ€™t have chocolate chips then use, 525 grams dark chocolate slabs that are easily available . Chop into fine pieces (should be at room temperature , not refrigerated).
  4. Please don't use milk or white chocolate chips or chocolate slabs as your fudge will turn out too sweet !
  5. With Chocolate pieces the cooking time maybe be a little more (2.5 to 3 minutes instead of 2 minutes ) . Just make sure that the chocolate gets fully melted.
  6. You can add chopped nuts (almonds / walnuts / cashewnuts )in the fudge if desired . This can be done once the chocolate has fully been melted.
