Sev

Sev is a deep fried snack made with besan flour (chik pea flour). Sev can have various flavors (of carom seeds, chili etc) but this is a basic sev recipe. Sev plays an important part in Indian Chaats (Indian street foods). This is very much a kid friendly recipe.

Ingredients

  • 2 cup Besan flour (Chik pea flour)
  • 2 tbsp Oil
  • 1/2 tsp Salt (or as per taste)
  • 1/4 tsp Hing (Asafoetida)
  • Oil (for deep frying the sev)

Instructions

  • 1 Mix all ingredients in a bowl (except for the deep frying oil that's mentioned).
  • 2 Add water (little by little, total about 1/4 cup or less). Mix well to make a thick paste. (But should be able to roll into a dough.
  • 3 Grease hands with oil, shape dough as shown in picture. Grease your sev maker tool with oil and use the smallest holes blade to make this sev.
  • 4 Put the dough into the sev maker. Close lid.
  • 5 Take a vessel to deep fry , fill with oil. Heat oil but not too hot. make the sev.
  • 6 Turn sev on the other side after half minutes. Cook for another few seconds.
  • 7 Cook for another few seconds.
  • 8 Drain sev on paper towel.
  • 9 Continue making the sev till all the mixture has been utilized. Cool completely. Store in an air tight container.
  • 10 Use sev as and when required in chaat recipes or you can just much on it!!!
