Goan Stuffed Squids

There are different ways of preparing squids in Goa but the most common and popular is the stuffed squid. This recipe makes use of the famous Goan Recheado Masala as the base. A stuffing is prepared with the tentacles of the squids (or a stuffing made with small prawns) with the masala and then stuffed in squids. Squids are then fried with a little recheado masala.

Ingredients

  • 12 medium sized Squids
  • 1 large Onion (finely chopped)
  • 6 tbsp Goan recheado masala (see recipe notes below for recipe)
  • Salt (to taste)
  • 6 tbsp Oil

Instructions

Prepare the Stuffing:-
  • 1 Remove tentacles from the squids and wash them thoroughly. (Check recipe notes below on 'How to clean squids').
  • 2 Chop the tentacles finely.
  • 3 In a skillet, add 3 tbsp oil. Fry onion till soft. Add 4 tbsp recheado masala, fry for 30 seconds.
  • 4 Add in the chopped tentacles, cook for about 3-4 minutes on high flame.
  • 5 You stuffing for the squids is ready.
Stuffing the Squids:-
  • 6 Clean and wash the squids.
  • 7 Stuff the squids with the stuffing that's prepared. Secure the open end of the squids with the help of a tooth pick as seen in the picture.
Cook the Stuffed squids:-
  • 8 In the same skillet (that you prepared the stuffing) , add 3 tbsp oil. Arrange the stuffed squids.
  • 9 Cook on each side for 2 minutes.
  • 10 Then add the remaining 2 tbsp recheado masala along with 1/8 cup water and cook on high flame for about 3 minutes.
  • 11 The masala has to thicken and coat the sides of the squids.
  • 12 Remove the toothpicks. Serve the stuffed squids.

Recipe Notes

  2. Do not cook the squids for more than the time specified.
  3. Overcooking the squids tend to make them taste rubbery.
  4. Instead of stuffing squids with tentacles filling, you could also use fine shrimps to use as the filling.
