Prepare the Streusel Topping:- |

In a bowl, mix together the flour and sugar. Cut the chilled butter into pieces and mix it into the flour mixture.

Using your hands, rub the butter well into the flour mixture. It should be a rough coarse mixture. Leave this streusel topping aside. |

Prepare the Cake Batter:- |

Preheat oven at 350 deg F(180 deg C).
In a bowl, beat butter and sugar till fluffy. Add in the egg. Mix well. Add the vanilla essence. |

Sift in the flour along with baking powder and salt. Fold the flour in butter mixture alternating with milk.

Spread the batter onto the bottom of the prepared pan, smoothing the top with the back of a spoon. |

Evenly arrange the blueberries on top of the cake batter.

Sprinkle with the streusel topping.

Bake for 40 minutes until skewer or toothpick inserted in cake comes out cleaning. The streusel should have a lovely light brown color.
Remove from oven, let it cool for 30 minutes.

Remove the parchment paper. |

Cut the cake into desired pieces. |

Serve ! This cake can be serve warm or chilled. Chilled cake makes the streusel topping to be crunchy. |

Hi Xanti. I haven’t seen any fresh blueberries here,bt I found dried ones. Will this recipe work wt dried BB? Any other fruit could b used? Tia.

Try using the frozen BlueBerries if possible. yes, you can use peaches etc 🙂
