1 | Boil, peel and mash the potatoes. Add egg yolks, salt and mix well. Refrigerate this mixture for at least 30 minutes. | |
2 | Divide into 8 portions. | |
3 | Oil palms of your hands, take one potato portion, flatten it , make a depression in it and put sufficient beef mince (I did not add green peas this time in my mince) filling in it. | |
4 | Close them and flatten them lightly. | |
5 | Dip in beaten egg white and shallow fry them till golden brown on both sides. Serve !!! (See recipe notes below). |

My potato chops break while trying. Potato seems dry. I use egg in the potato mix. But they never stay whole.

I am a great fan of your cooking and have followed your recipes even on bongong, this recipe I followed every step to t, but the potato mash kept sticking to to my palms not letting me to shape them, adding a little semolina did help. Did I over boil the potatoes?

Well, after mashing potatoes, keep them covered in refrigerator for about 30 minutes. Oil the palms of your hands every time you scoop mashed potato make a chop. So that way it wont stick. Hope this helps ๐ Try and see.

Xanti why do we need to refrigerate the boiled potato mixture.
Can we add salt pepper jeera powder and haldi powder to it.

I refrigerate it so that the potato mash isnโt too sticky and soft while shaping them … yes you may add spice powders to potato mash if you wish to.

Keep the mashed potatoes in the refrigerator for some time till you can work with it, no adding of cornflour or cornstarch

If you need to mash potatoes , they need to be soft โฆabout 5-6 whistles (on high heat )
