Recipe Notes
Just a note from me for first timers in baking BEBINCA:-
- Ingredients in making a BEBINCA are the same for a BEBINCA recipe. Unlike other desserts, BEBINCA is one dessert that you MAY not get it perfect ( as in the taste will be good but layers may not be perfect) in the first trial itself .
- Baking bebinca requires patience and practice and also depends on oven types .
- As and when you make it you will get a hang of it (timing and your oven temperatures ) and get the perfect layers .
- Add more caramel (I have used more caramel ) to get darker shades for alternate layers.
- It took me about 11 trials in these 1.5-2 years (as and when I had time to work on it ) to get it to perfect layers.
- One may get it perfect in the first trial itself!
- But if you don’t get perfect layers in the first trial , then don’t give up as practice makes one perfect !
- As mentioned in the recipe , caramel is optional , you can skip it if you wish to.
- Make sure you set your timer while baking each and every layer!
- Click this link on how to make the caramel.
Use as much caramel needed to get a good color. (Start with 1-2 tbsp and gradually increase if needed)
- Once your BEBINCA is baked, allow it to cool completely at room temperature. I suggest , overnight cooling in baking pan. Next day , unmold the bebinca from the pan.(this reduces the chances of layers getting separated once your unmold and slice the BEBINCA).

What coconut milk do you use ? fresh coconut milk or packet – please advise and what brand .

Vou can make the coconut milk with fresh coconut. For me testes better.

In step 6 in the recipe, the temperature is mentioned…so same as the temp you preheat thats 400 deg F (200 deg C).

Just to check did you use the bake option or Broil option on the oven. Since baking bebinca requires heat from top only.

We use almost the same ingredients but 300 gm sugar and 100gm ghee.
We use 1/4 cup for each layer, 3 minutes for each layer but smear ghee with a silicone brush, not add a tbsp each time.
We get about 30 layers and it looks so much better, is less sweeter and less greasy than the real Goan bebinca our parents made.

Every layer of BEBINCA needs a generous amount of a tablespoon of ghee before baking … probably the ghee was less on the layers .
Hi dear. Sugar caramel is? Caramelizing the sugar and once the sugar is caramelized … Remove from heat… add like a tsp of water…. And put it back on fire for a minute ,Right ?thats it…

Will I have to change the settings of the oven ? As in will not the bottom layer get burnt, over cooked or more crispy than the top most layer

You can cook the bottom most layer on direct heat (gas flame) or you make bake with top and bottom heat of oven ON .
Have made this but your recipe looks more original , When I bake some of my layers big bubbles or some parts of layer puffs up , can you advice me , why that happens ?

Usually the layers puff up at baking as the top heat of the oven is being used.
Try to use the lower rack of your oven for bebinca as the heat from top sometimes is too much and the layers tend to puff up at baking. Its just that everyones ovens are different , and you need to experiment with your ovens (like adjust the racks, the hear etc). specially for bebinca.
Hi Xanti, is it ok to bake only with the bottom heat for all the layers. I use 2 to 3 different food coloring instead of caramel?

I tried a different recipe before and I did the baking and it came like a cake — missing that smooth texture. I’ve heard from some people that it’s broiled not baked??

Check your oven settings …
Top heat , bottom or base heat … how is it ?
Or there might be broil or grill option (which is basically too heat only of the oven )
The bottom most layer is baked like regular cake or cooked over flame on stove top … test layers are cooked on only the top heat .

go with 600 ml itself …it will give you the correct number of layers…800 ml will give you a high layered bebinca 🙂

Made the bebinca last night (2nd attempt after a failed one last week from another recipe)- PERFECTION!
A wee query Xanti – your slices are beautifully shiny, like a soft cheese texture – mine are soft & layers easily falling apart but don’t have that beautiful shine … sigh…
Reduced the sugar to 250gms, used melted (not hot) ghee between the layers, one tablespoon as recommended.. The reduced sugar works well..still sweet but not cloyingly sweet
The bebinca is not oily.. in fact quite fabulous, except for that shine…

the shine is coz, after i sliced it, i microwaved it for few seconds , so the ghee / butter in the layers melted a bit to give the shine 🙂
Let the bebinca cool down completely, cut it the next day. If you do it the same day, layers tend to fall apart and slide !

I too love Bebique very much. Have made it in years gone by over the coal flame first and then only with the coal flame from the top – no flame below. Perfect.
Now we no longer use coal but the Faber oven – still afraid to give the sweet a try but tempted to give it a try.Please could you urgently confirm that the very first layer will be cooked on the stove top low flame. Subsequent layers would be done under the grill – but the griller does not have settings like the oven has. So should I put a lid on the container if I feel the flame is too strong. Also approximately how many minutes does each layer take to set and must the ghee be hot when I pour it over each layer.

I’m facing the same problem here in ten US with the grill …
Well, what I do here is , cook bottom layer on regular bake option .
Rest layers grill , but keep the oven door slightly open and grill all the layers. That helps .. it doesn’t burn.
Ghee has to be in normal form … just apply over each layer as layer is hot , ghee melts

One question. What coconut milk…? From the tin..or fresh or powdered mixed with water?

check with toothpick to see if its cooked, if it comes out clean….or cook for about 15 mins each layer. it shld be done… but dont make the layers too thick , it will take more time for each layer to be cooked.

My husband is Goan, and I know he will be thrilled if I can manage to pull it off! Hi xanti..wen u add caramel in the batter does it crystalise or harden in it. after putting the last layer once it’s cooked do u off the oven or keep it for sometime. Do I have to keep my oven open. Some people do so have you done it too.

You will get few layers with half recipe (if your using the baking pan size that I mentioned …
Or you will get very small BEBINCA with half quantity and many layers .

If you have too option then use top ,
Else yes you can use grill option , but make sure your BEBINCA isn’t too close to top grill else your layers will get too brown or burnt immediately coz of the high heat from top .
Tip:- if your using grill option , then make sure when it’s grilling keep the BEBINCA on bottom rack , if you feel it’s still burning the layers , keep the door of the oven slightly open while the layers get grilled . It will prevent burning the layers.

BEBINCA batter is fine to be mixed with a spoon or a whisk …
if you wish to , you may use electric mixer . But make sure no bubbles (or frothy ) are formed in the batter .

We make use of COCONUT MILK in the recipe .
Not heavy cream or coconut cream …
Caramel :- in a pan add 1/4 sugar , add 3 tbsp water , allow it to caramelise .
Worked for us, got perfect 9 layers on first go. We did it on gas mark 4.5 for 14 minutes. Great recipie thank you

Hi xanti, thanks for the lovely recipe. I tried the recipe yesterday. It tastes really good. But I the bottom layer and sides turned out very hard. I used grill at 180° for all the layers. Cooked each layer for around 15-18 min. I dont know what went wrong. I had cut and throw away the side.

Thanks for sharing the delicious recipe, I’m attempting it for the first time, so far it’s going well, second layer is baking! The only issue o had was when I tried to add the caramel to one of the mixtures, Is there a trick to doing that? I added it straight from the stove to the mix and it became a solidified sugar mass inside the liquid, so unfortunately I had to proceed with both mixtures of the same color.

But for regular / original BEBINCA that burning is good to show the difference in the layers.

My bottom layer becomes hard. My top layer became hard and crusty, even though I put lots of Ghee when it was done.
Because of this it becomes difficult to unmould and cut. The layers in between are beautiful texture and tasty.
It looks like the whole bebik is vey hard , until I manage to cut it and then it is ok.

Followed your recipe to the T. Came out perfect, the layers were really good. However I found that the bebinca was very oily, i used pure ghee. Do you think I should cut down on the ghee to 1/2 tbsp instead of 1 tbsp?

I tried your recipe for the first time ever. Never made Bebinca ever. So the first layer (base layer) is turned hard when I overturned it in the plate. The inside layers are soft, not very accurate. The taste is lovely.
I’m not sure if the base layer is supposed to be hard. I know I won’t get it on the first go, will have to try it again. But if you could correct/ guide me where I went wrong would be great.

Every oven is different so I can’t say exactly the temp and bake time
You will have to try / experiment different temp
Tried the recipe on 28.11.20 only reduce the sugar to 300 gms
This is the first time i tried bebinca. followed instructions to the T

Hi Xanti. Tried this, the taste was good. Only thing is the layers were not stuck together but came apart. I thought I was quite generous with the ghee. Could there be any other reason why they come apart? Thanks in advance.

I tried making the bebinca . On first attempt it turned out good taste wise but the texture looks little rough not smooth . On second attempt the layers split I could not cut a slice of it and became very oily.when baking it in oven the layers puff up while baking and don’t become hard . Base layer and top last layer turn rough texture infact all the layers.
Please help.
