Keep all ingredients ready. |

In a bowl, beat together sugar and eggs. |

Add in the ground coconut. Mix well. |

Add the rava. Mix well. |

Stir in the melted butter along with the salt and cardamom and nutmeg powder. Mix the batter well. Keep it covered aside at room temperature overnight. |

Next day, add the baking soda, give it a quick stir. Preheat oven to 350 deg F (180 deg C) . |

Line your baking pan (I used 13 X 9 X 2 sized pan) with baking paper and pour in the batk batter. |

Bake for about 30 minutes, it starts to get a dark brown color on the top. So, after 30 minutes, I covered the top of baking tray with a foil and further baked it for another 10-12 minutes till a toothpick inserted in the center of batk came out clean. |

Remove from oven, let it rest and cool to room temperature. Remove batk off the baking paper. |

Cut and serve as required. (See recipe notes below). |

as the top was getting brown, i covered with foil so next few minutes of baking , the top doesn’t get too brown.

Hi Xanti, I prepared batk today with the recipe you gave. It was so perfect. This is my first perfect batk after over a decade of trying to get it right with recipes from different people and sources. When I saw the batter I wasn’t certain it would turn into how a batk should be, but I went with it and was so glad I did without trying to temper with it.
Can’t thank you enough for this keeper recipe. Incidentally I’ve also tried your coconut ice as well as rose cookies in previous years which also came out perfect.

Hi Xanti I tried this recipe yesterday. I used desiccated coconut as I wanted the cake to last a while. (I did not grind the coconut as the mix was quite fine). Followed the recipe to the book & it came out superb. I normally dislike baking cakes as they almost always flop but this turned out a beauty & the taste was to die for! Thanks Xanti for the “purrfect” recipe. Unfortunately it will not last till tomorrow as it is just too delicious.

I have not used a convention microwave till date… So Im not very sure on how to guide you on this one…Please check your oven Manual (Guide handbook). It should tell you regarding baking cakes etc…. If baking cakes is fine, then go with the same temp and time as i have mentioned in the recipe ๐

Not required if your using butter / baking paper to line the can …
If using the batter directly in the pan , then you need to coat pan with butter / oil and dust with all purpose flour .

Xanti, I tried your recipe and the batika turned out quite well. My family is enjoying it. Thought I’d let you know that I used unsweetened dessicated coconut (2.5 cups) and added 2 teaspoons of vanilla in addition to the spices. Otherwise followed the recipe as directed.

My batk is not rising, even though I’ve followed the recipe exactly.
One friend suggested it might be the temperature is too high, since I’m using a fan forced oven.
Could that be the reason? What might be other reasons?

Yes you may .
But I would recommend not to grind the frozen coconut (as I had issues with this in the past … it would set a transparent kind layer at the bottom ) sometimes it works fine …
so maybe donโt grind the frozen coconut.

When any recipe calls for baking soda or baking powder do not Interchange the ingredients (for any recipe) as both the ingredients composition is not the same.
But , in case of Batk I have seen people use baking powder . I have not tried using baking powder in my Batk recipe as this recipe belongs to my grandma in law and she uses baking soda.

Hi Xanti, it was my first time trying the batika and I was real glad it was successful. Just that I gave a bit of twist trying to add sugarcane jaggery along with white granulated sugar. And the color of the batika turned out a bit brownish from inside too

I had to bake it for 90 minutes, my fault…think I didn’t preheat the oven well, also my oven’s marking are 140 and 190 and the pointer knob is broad so not sure if I adjusted to 180 accurately. This is just a feedback.
