1 | In a small pan, add ¼ cup water, sugar/jaggery, coconut and salt. Cook on low flame till mixture turns dry and sticky. Add the cardamom powder. Keep the filling aside. | |
2 | For the Batter:- Mix in the flour, egg, salt, baking powder and sufficient water to make a slighter thinner batter than pancake batter. Divide batter into two parts. (If using colors, pink and green) Otherwise use white batter to make the pancakes. | |
3 | In a small non-stick pan (about 6 inch), grease it with ghee. Pour half ladle pink batter and swirl the pan to coat the pan. Cook for half minute. Remove from pan. Repeat with all pink batter. | |
4 | Repeat same with green batter. | |
5 | Fill each pancake at one end as shown with the coconut filling. | |
6 | Fold along. | |
7 | Fold both sides. | |
8 | Roll along. Repeat with all other pancakes. Serve at tea time. |
