Boil the potatoes and peel them. |

Mash the potatoes, Add the sugar and stir well. |

Next, add the eggs one by one beating well after each addition. Add the salt and cardamom powder. |

Stir in the coconut milk. |

Sift in the flour. Mix well. |

You will get a pancake consistency batter.
Preheat oven at 325 deg F.

On the gas burner, heat a baking tray (I used 8 inch square pan ) , add 2 tbsp ghee. Let the ghee melt. |

Pour the bebinca batter into the tray. Let it cook on the gas on LOW heat for 5 minutes for batter to thicken a bit. |

Transfer the tray into preheated oven. Bake for 1 hour. Insert a toothpick or skewer to see if done . Bake for more time till skewer comes almost clean (it won’t come very clean as it’s potato mixture )
It should not be wobbly .
Let it cool completely in baking tin itself.

Xanti, I too made this Bebinca of Potatoes, but we called it the Mock Bebinca … a friend of mine made a rainbow bebinca … just adding different colours to the different layers, and I have also eaten Bebinca of 2 colours dark and light brown layers alternated. Please post the recipe of the other bebincas too, when time permits ….. Love your blog
yes im aware of the rainbow one too…but that’s just a variation. yes will be working on the other recipe’s too.

hi Anushka, yes you can use Sweet Potato too…just reduce the quantity of sugar according to the sweetness of the potatoes your using.

Dear xanti, it is bebinca coconut layerd cake. but has sprinkles of coconut inside. It is made with custard n coconut flackes. Wonder if ur aware of this recipe.

I have not tried using coconut milk powder.
Probably if the end result gives you coconut milk (as in same taste and texture ) then I see no harm in using it.
Thank you so much for your website. Looking at the recipes brought tears into my eyes because it reminded of my beloved granny. I used to come back from school had alle belle, neureo or pattolio or something or the other ready for me to eat because she was the sweetest. I can never recreate her Ghristmas fruit cake since I never knew how to make that fruit mix even though I made it with her as a kid. I am going to try that recipe too! I saw all the recipes for sweets she used to make and keep during Ghristmas for when family comes to visit. I am looking forward to trying those this Christmas. Hi, do we use only lower grill in the oven to bake the bebinca? Or do we use both lower and top grill?
I used all the measurements exactly as in the recipe except that I instinctively used 400 g of sugar instead of 450 g. Yet it was extremely sweet. Next time I would reduce it to 350 g of sugar.

As for me coz I’m here in the US , the sugar is so fine and I feel it’s very less sweet compRed to the one that we get back in goa . ( I don’t know where huge based at ) I feel I need that quantity to achieve the sweetness. You can adjust as per sweetness you desire.
I live in Canada and I’m Goan, and the sugar here is the same as the US. I guess it depends on individual tastes. I’ve always felt that most Indians typically make their sweets too sweet and I’ve learned to adjust. Thank you for all your recipes anyway I use your site a lot.

How long are we supposed to boil the potatoes for? I boiled mine for three whistles long and after mashing, it still had lumps. How do we get rid of the lumps?

On HIGH flame for 1 whistle, then lie to medium flame for 10-12!minutes ,
Once done , poke and check to see if center is cooked or still hard.

Xanti this is an awesome fail safe recipe. I have used it a couple of times. Thank you! The only alterations I have made is reduced the sugar to 350gms as we don’t like our desserts overly sweet.

Hi Xanti – Thanks for your recipe. The bebinca baked well. The top had a brown crust but it had a cracked line across. How to avoid it from cracking at the top so that it comes out as a smooth crust which will make it look good for presentation? Thanks again.
