Grind the ingredients under 'for the masala' into a fine paste using about 1/4 cup water.
Wash the mince. Apply the ground masala and leave it to marinate for 30 minutes. |

Heat oil in a vessel. Fry the onions till golden brown. |

Add the chopped tomato and cook for 5 minutes. |

Add the marinated mince and the goan sausages. Mix well. (Addition of goan sausages really does make a difference to the taste). |

Cover and cook for 20 minutes till done. (Don't add water, let the mince cook in its own water). Keep stirring it occasionally in between. Adjust the salt. Let the water dry completely. Put off flame. Keep mince aside to cool down completely. |

Once the mince is cooled, add the ground slice bread to it and mix well. |

Next, grind the mince mixture in small batches. Add the egg, coriander leaves, vinegar and chilies. Mix well. |

Divide this mixture into 30 equal portions. |

Shape each portion into croquette. (Refrigerate for at least 30 minutes so its easy to dip it later in egg wash). |

Dip croquettes in egg and then dip in semolina or breadcrumbs. (At this stage, you can freeze the croquettes in a container for 2 months). |

Deep fry the croquettes. |

Remove croquettes on absorbent paper. (The croquettes in this picture are deep fried with semolina). |

You can skip the sausages in the beef croquettes recipe(its optional) . You should get sausages in the mexican stores (that taste something close to Goan Sausages).

Make sure you drop them in oil and remove them soon … if kept in oil for some time they tend to break

Make sure the croquette mixture is nice and dry … deep fry on high flame and immediately remove them to prevent cracking.

Hello Xanti, this is the 2nd Recipe I am trying from your awwesome collection and both have been very satisfactory. U R very good with your quantities, etc. When I cooked the beef mince, it would not dry up, so I squeezed the mince to get rid of the liquid. It worked very well. It loses a little taste however cos the liquid that I squeezed out was very tasty π

Traditionally they are deep fried β¦ you may try and use shallow fry method
