Wash the beef chunk .Pat dry with paper towel. |

Cut the meat into 4-5 large pieces. |

Grind all the ingredients mentioned under 'For the Roast Masala' into a fine paste and apply it to the meat pieces. Cover the bowl with cling film and marinate for at least 1 hour (I marinated overnight in the refrigerator). |

In a vessel, add the oil. Take the meat cubes and fry them on high flame . (Reserve the marinade). |

5 |
Fry them on all sides till browned, for about 4 minutes. (This is done to lock in the meat juices) |
|
6 |
Add in the marinade, about 1 1/2- 2 cup water, onion and the kashmiri chilies. |
|
7 |
Cover and cook on low to medium heat for 45 minutes to an hour. (Turn the meat pieces after every 10 minutes). Add more salt if needed. Let the meat cool completely before slicing it. |

8 |
Slice, serve and enjoy the roast meat. Use the roast meat to make chilly fry , sandwiches. (See recipe notes below for roast meat sandwich recipe link). |

I am going to try your roast recipe. Do you prick the meat with a fork and then apply the roast masala paste. Please let me know if you have to add 1 1/2 -2 cups of hot water or does the water have to be at room temperature. Thank you

Well, if i’m roasting the entire one kg chunk of meat, I prick the meat with a skewer else I cut large pieces like the way i have shown in the recipe:)

I feel, it should just be done the authentic slow cook way, not pressure cooker. I prefer the slow cook method for roast and I have not tried the pressure cooker method.

No, there’s no such reason…. I was told the recipe by my mom which I followed 🙂 She says you can add if you wish to 🙂 I have updated the recipe by adding 8-10 cloves of garlic .

Unfortunately, I already marinated with my own green masala (lots of basil, mint, cilantro, habanero, thai chillies, garlic, ginger, tomato, onion, lemon, vinegar and salt. smelled good but have to how it turns out… LOL) and then googled for the recipe, how stupid is that ha… but will try your recipe next time…

Made this a few days ago and it turned out great! only changes made was i substituted with ginger-garlic paste and burnt some sugar when seering the beef. Came out better than my mohter’s and that’s saying something!

I usually don’t make masala for roast and store
But you can marinate the meat 3-4 days ahead and refrigerate. Even you can cook 3-4 days before and keep ready ,
The longer you keep it cooked the tastier it get

Tried out your recipe. Turned out fantastic. One difference is that I pierced the beef pieces with a fork before applying the marinade and left it overnight. Thanks for the wonderful recipe.

Thank you Xanti for this awesome recipe. I was so anxious. I dont cook all this serious Goan food often. I searched for hours for the right recipe. Prayed to God and tried this and I am so glad I did. The result was excellent. My husband who is quite a foodie was pleased. I used the proportion of the ingredients you mention for 1 kg of meat for half kg of meat I had. I wanted more gravy and for it to be spicy. I have a query can I double the proportion of ingredients for 1kg of meat? And keep scaling as I increase the proportion of meat?
