In a vessel , add the sugar with 125 ml water and bring it to a boil. |

Add the Rawa to the sugar syrup and mix it well. Continue cooking the mixture on low flame for about 2 minutes. |

Grind the coconut with a little water.(about 1/3 cup water )
Add the ground coconut to rawa mixture, mix well.

Add salt and ghee/ butter , stir well.
Take mixture off the fire. Let it cool.
Leave this mixture aside for at least 4-6 hours or overnight in fridge.(see recipe notes below ) .

Then next day (if keeping batter to soak overnight ) mix the egg yolks with the Bolinha mixture. Mix well . Now , Add the beaten egg white to the Bolinha mixture. Mix well . |

Next, add cardamom powder, all-purpose flour (about 1/4 cup ) and baking powder to the mixture. Mix well. |

(Before shaping bolinhas , if you feel that the mixture is little sticky and difficult to handle , refrigerate the mixture for about 30 mins to an hour so it’s easy to shape them ) .
To shape the bolinhas, take about 1 tbsp each of the bolinha dough, place on a flour sprinkled surface and shape it, make diamonds using toothpick. (Dip toothpick in flour if it sticks to the bolinhas while making the design ) . Or you can use a fork by dipping it in flour each time you make the design.

Preheat oven at 375 deg F(190 deg C).
Place bolinhas on a baking tray sprinkled with some flour. Bake for 15 mins then for a nice brown color on top for bolinhas, turn ON the top heat of over for about a min. (Please keep a check when Top heat is on , to make sure you don’t burn the top. ) See recipe notes below.

Cool the bolinhas completely on a wire rack.
Store in air tight container.

There’s no need of dry roasting the rawa here. Use about 1/4 th cup water to grind the coconut. Happy baking !

If you use unsweetened desiccated coconut(almost the same quantity as fresh coconut) use sugar quantity as mentioned in the recipe. I would recommend unsweetened coconut as the sugar syrup is required to soak the rava.

Can I make bolinhas in a conventional oven.But In oven we are not suppose to put aluminium foil or parchment paper instead can I just dust baste the tin an dust with flour will this help.

I use water syrup so that the rawa gets well soaked and gives nice texture to the bolinhas . You can try beating eggs and sugar technique. No harm in trying out 😊

Hi Xanti…I’ve been making your recipe for the past two years..the taste , shape and everything turns out fine…the only issue I have is once I put them in the air tight container they tend to feel soft on the outside unlike bolinhas which when u feel are hard and crisp on the outside but soft on the inside…what am I doing wrong? Should i air them for a longer period before putting them in an air tight container??

Bolinhas tend to loose their moisture after a long time , how long did you refrigerate them ?
I would just microwave for few seconds and eat / serve them.

Homemade cannot be compared to market bakery stuff!
Market ones they usually use coconut that has previously been used to extract coconut milk for dodol and BEBINCA (so the dry coconut is used to make BOLinhas ).

Tried your recipe for bolinhas… Turned very yum… Thank u… This is one recipe I wanted to try since long.
Just had 1 question though, the next day the bolinhas turned soft from the outside… No compromise on the taste but still it would be great to have them remaining crisp from the outside, the way they were when taken out of the over.

Hi Xanti… I tried this recipe twice and both times it was perfect.. the only problem I had was after storing in an airtight container, the bolinhas turned soft. I stored them only after cooling it completely. But next day the outer crispiness was lost.. please help.
