In a vessel, add the oil. Add the mustard seeds, allow them to splutter. Add the cumin seeds, allow them to sizzle. Add the curry leaves, hing and ginger. Fry for few seconds. Add turmeric powder. |

Add the potatoes(drain from water). Fry them for a minute. |

Add about a cup of water. Add salt as per taste. |

Cover and cook them till done. |

Prepare Pooris/ puris . (See recipe notes below for puris recipe). |

Serve potato bhaji hot with puris. Or a mix of peas bhaji as well. (See recipe notes below for peas bahji recipe). |

I always loved having this bhaji when I lived at home, in Goa, but when I moved out, I missed it terribly. Made this last week, and I absolutely love it! So simple, and so delicious!
