Easy Potato Bhaji

Quick and easy recipe for potato bhaji. No-onion and no need to pre boil potatoes in this recipe. Very much kid friendly recipe.

Ingredients

  • 2 medium sized Potatoes (cubed into small pieces , soak in water for 2-3 mins)
  • 2 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1 inch Ginger Piece (finely chopped)
  • Pinch Hing (Asafoetida)
  • 1/4 tsp turmeric powder
  • Salt (as per taste)
  • 2 tbsp Coriander (chopped)
  • 5-10 Curry leaves

Instructions

  • 1 In a vessel, add the oil. Add the mustard seeds, allow them to splutter. Add the cumin seeds, allow them to sizzle. Add the curry leaves, hing and ginger. Fry for few seconds. Add turmeric powder.
  • 2 Add the potatoes(drain from water). Fry them for a minute.
  • 3 Add about a cup of water. Add salt as per taste.
  • 4 Cover and cook them till done.
  • 5 Prepare Pooris/ puris . (See recipe notes below for puris recipe).
  • 6 Serve potato bhaji hot with puris. Or a mix of peas bhaji as well. (See recipe notes below for peas bahji recipe).
