Goan Cafreal Masala

This authentic Goan Cafreal Masala recipe is used mainly for making Chicken Cafreal. It can also be used in other meat preparations as well.

Ingredients

  • 1 bundle Fresh Coriander (about 1 cup, tightly packed)
  • 3 Green chillies (roughly chopped)
  • 1 tbsp Granulated white sugar
  • 1/2 tbsp Coriander seeds
  • 1 tsp Cumin
  • 1/2 tsp Fennel seeds
  • 1/2 tsp cloves
  • 1 inch Cinnamon stick
  • 1 tsp Peppercorns
  • 1/2 tsp turmeric powder
  • 1 inch Ginger Piece (roughly chopped)
  • 8 Garlic cloves (roughly chopped)
  • Rum (rum as required OR use half vinegar and half water)

Instructions

  • 1 Keep all ingredients ready. In a mixer grinder, grind all ingredients to a fine paste using rum OR vinegar and water.
  • 2 Cafreal masala is now ready for use. This is sufficient for about 800 grams - 1 kilograms chicken.
