1 | Keep ingredients ready. | |
2 | Wash the basmati rice and keep aside. In a pressure cooker, add the oil and the spices along with bay leaf. | |
3 | Add the onion and fry till nice and soft. | |
4 | Add tomatoes and cook till soft and mushy. | |
5 | Add the greens peas , turmeric and cook for 2 mins. | |
6 | Add the rice and fry for 2 mins. Add the broth. Close the pressure cooker. Cook on HIGH for ONE whistle. Keep aside till the pressure is released. | |
7 | Pulao is ready. Take a fork and mix the rice and loosen it carefully. Make sure not to break the rice grains. | |
8 | Goan pulao goes well with Goan Sausage chilly fry or Xacuti. (See Recipe Notes below). Enjoy! |

How much would you say the 1 cup of Basmati rice weighs (in kgs)?
hi Kimberly, its 1 cup Basmati rice is about 200gms
Can we mix with cooked rice instead of putting raw reason it get very soft
hi Cypriano, Since you are using pressure cooker you need to use raw rice…make sure the water quantity and rice quantity is correctly measured, you cant go wrong.
Hi Xanti. Thanks for the Goan Pulao recipe. My grand mother used to prepare and we didnt know how to get that taste back, your recipe was just as she prepared it. I cooked it with your recipe of Goan Pork Sausage Chilly Fry. Only one comment, I had to wait for 2 whistles instead of 1 for the way to dry out. Thanks much for the recipe though. Will be trying more of whats posted by you.

Thanks for the recipe. Tried this today and turned out excellent!!! For those using electric instant pot, use 1.5 cup broth for 1 cup rice and pressure cook for 4 minutes and then 10 minute natural pressure release.

If I use two cups of rice, I am assuming that double all the ingredients? Should I also cook it for two whistles?
Also when I tried with one cups rice, the pulao turned a bit soft. Is it because I just left it in the pressure cooker too long?

Yes double ingredients for 2 cups rice and one whistle only …
Well , if you feel the rice was too soft , then change water to 1 and 3/4 cups for 1 cup rice instead of 2 cups water

Tried your Goan Pulao. Everyone enjoyed at home. I just have one query. If I’m using 3 cups of rice, then do I need to use double the water( excluding the broth) for cooking? I do not cook it in a pressure cooker.

Use 6 cups water for 3 cups rice (for cooking in vessel )

For 1 kg rice , use about 1 cup oil.
Or to make the rice more loose use a little more oil ( 1 cup and another 1/4 cup ) .

Hi love this recipe but I wanted to know adjustments for cooking 2 cups of rice in an instant pot. Is the cooking time the same as for 1 cup?
I’m not sure it depends on your insta pot.
