Holle

Holle are cones made with jackfruit leaves, rice paste applied to them and then stuffed with coconut jaggery filling known as chunn. These rice cones are then steamed. Holle are prepared during special occasions, festivals and on certain days like 24th June(Sao Jao),1st August, 15th august(Assumption of Our Lady).

Ingredients

  • 1/4 cup Chana dal
  • Salt (as required)
  • 3/4 cup Jaggery (i used 1/2 cup cane jaggery and 1/4 cup palm jaggery)
  • 1 cup Fresh grated coconut
  • 1/2 tsp cardamom powder
  • 12 Jackfruit leaves
  • 1 1/2 cup Rice flour

Instructions

Prepare the Stuffing(Chunn):-
  • 1 Soak the chana dal for atleast 2 hours.
  • 2 Boil the dal using 1/2 cup water and a pinch of salt for about 10 minutes till t he dal is cooked. Drain the water. Keep the dal aside.
  • 3 In another vessel, add 1/4 cup water and jaggery and allow it to melt. Then add the coconut and a pinch salt. Cook till the water dries. (Not too dry, keep the filling a little moist).
  • 4 Then add the chana dal along with cardamom powder.
  • 5 Mix well. Now your filling(chunn) is ready. Keep it aside.
Prepare the Leaf Cones:-
  • 6 Wipe the jackfruit leaves with a moist cloth till they are clean.
  • 7 Take a leaf, make a cone.
  • 8 Using a toothpick, secure the leaf tightly to form the cone.
  • 9 Prepare the remaining cones from the leaves the same way. Keep them aside.
Prepare the Holle:-
  • 10 In a bowl, add the rice flour and 1/2 tsp salt. Add 2 cups hot boiling water to the flour. Mix well till it forms a nice spreadable consistency. (Add more water if required to form the paste)
  • 11 Now apply this rice paste to the leaves cones in the inside.
  • 12 Fill the cones with the coconut stuffing.
  • 13 Fill all the cones.
  • 14 Now seal the top of the cones with some flour.
  • 15 Place the cones in a steamer.
  • 16 Steam them for about 10-12 minutes.
  • 17 Remove them from the steamer. Allow them to rest for about 10 minutes.
  • 18 Serve! Remove the jackfruit leaf and enjoy the holle!!!
