Knead the flour, salt and 1 tbsp oil using about ½ cup warm water till a soft dough is formed. Leave the dough covered aside for 15 minutes. |

Divide dough into 10 equal portions. |

Take 2 portions, dust in all-purpose flour and roll into about 4-inch circles. On one circle, apply little oil all over and then sprinkle all-purpose flour. |

Cover the oiled and flour dusted circle with the other circle. |

Roll out this double circles about 7-inch. |

On a hot skillet on low flame, place the sheet. You will notice bubbles appearing. |

Immediately flip on the other side. Keep for about 30 seconds. Remove Then remove from skillet. |

Repeat steps 3-7 for remaining dough portions. You will have 5 circle sheets now. Take each circle and separate them into 2 sheets. |

You will have 10 sheets now. Stack all 10 sheets together. Then using a knife or kitchen scissors, cut into 3 portions as show in pic. You have 30 samosa sheets ready to be used. |

Use them right away or wrap them in a foil and then in a zip lock bag and freeze them whenever required.
Thaw them at room temperature before using.

I always have problems separating the two sheets after cooking.they don’t come apart. What am i doing wrong?

apply oil and dust more maida flour between the sheets sheets while preparing them and make sure that you cook them well enough so that you’ll be able to separate them 🙂 If not cooked just right , then they are difficult to separate 🙂

Cut them into Dorito sized triangular shapes and fry them in oil. They make tasty snacks with a little chilli and salt or pepper and salt with any dip yoi prefer

Would I apply a little oil on the skillet in order to prevent the samosa dough sheet from sticking to it?

Usually the dough sheet should not stick the pan …
If you need to , you can apply very little oil
This is the same way ,the same method and in fact the same ingredients too except for the oil they use sesame oil you have used normal vegetable oil .Chinese pancakes for Peaking Duck. .Yes the sheets really taste great when fried.

How do I stick the open side of pastry after the filling, to seal the samosas. Since the pasty is cooked, it will be hard to seal the sides with a dash of water.

If we want make Samosa’s next day do I need to freeze them or normal fride is enough

Can I half fry Samosa’s and after few hours again can I fry golden, so that I can serve hot for guest, when I am making I large quantities

Am glad I came across your site…I tried on two occasion but still keeps sticking together..where have I missed it? Do I allow it cool off before trying to separate the dough or what exactly..because it keeps tearing apart and this breaks my heart

The samosas when hot are crispy and after few minutes the crispiness is gone… What should I do to maintain the crispiness??
