Knead all ingredients with about 1 1/2 cup water (Use more if required). |

Cover the bowl with a cloth and allow dough to ferment for at least 1 hour. Dough should double in size. (Depends on the climate, warmer climate will ferment the dough soon compared to colder climate which may take about 2 hours) |

Line a baking tray with parchment paper or you can directly dust your baking tray with flour. After 1 hour, divide dough into 8 pieces (I set 6 on one tray and 2 on another tray). Shape them round (left 2 pao that you see in the pic) Then shape them a little long on both ends as shown in the pic (rightmost 4 pao). Cover with cloth and allow them prove for the next 30 minutes. |

Preheat oven at 400 deg F (about 200-205 deg C).
After 30 minutes, apply some water over the breads (this helps to get that crusty top). dust some flour (I used whole wheat flour to dust, you can use all-purpose flour as well) . Use a knife to make a cut on top as shown in the picture (slight cut along on top of bread and not too deep cut) . |

Put them in the oven and bake for about 25 minutes (mine got baked in 23 minutes). Allow to cool on a wire rack. |

Enjoy with your favorite Goan curry or just butter when the breads are nice and warm ! (See recipe notes below for Goan Pao and Goan Poee/Poi Recipe links). |

Hi Xanti, your recipes look yummy can’t wait to try some. A friend of mine from Hamiltonmade your pork balchao with xinannio. Was yum. She passed me your site.
In Tiswadi or Bardez these are called Pokxie, Kaatre are Bread cut on the sides and they resemble the outline of figure 8.
Different breads went in the oven depending on the heat of the oven. Hottest, poie went in first and at its coolest and last, the famous formachae pao. In between went pokxie, kaatre, kakonn. Yum missing those breads.
But all said and done keep up the good work and keep those recipes coming.

yes, I have tried using whole wheat flour … but the result wasnt too good… will be making it again with 80% whole wheat and 20% all purpose flour. Will post once I make them and they turn out good 🙂

Lucky to come across your website. Would definitely like to try the Kaatre pao (miss the goencho poder with his early morning horn “alarm” ).
My wife has made chapaties using 80% whole wheat and 20% all purpose flour – great results. But these are roasted on the tavaa, so not sure how the kaatre pao with 80% whole wheat and 20% all purpose flour will turn out in the oven. But would definitely like to give it a shot. Will keep you posted with the results.

Small correction. This is not katre pão, this is “unde”. Katre pão is the hourglass shaped pão and that is cut with a pair of scissors. Pão is the square bread. You might want to change the name. The cut in the middle is done with the hand. Unde or undo (singular).

In my description the first part (that I have mentioned … rectangular and pulled on four sides … Thats the hour hp
Glass shaped one I meant to say …I have seen them do in goa bakeries too , the man sitting down , cut with a scissor and pulling them all sides place them on their lap )
And as far as I grew up I have known both these breads (hour glass shaped ) and this one with the cut on top (have seen them doing with a knife ) both as Kaatre Pao.
I know Pao is rectangular small ones (I have a recipe too on Pao if you have seen 😊).
I grew up in Goa itself, nus that recently past 5 years settled in the US. I have also noticed as I grew up that south goans and north Goans say different words for different breads available.
Yes and I guess I need to be more specific in calling it the hour shaped kind of bread In my first part of the description… thanks so much 🙏oh yes I remember as far as they make the cut with hand (I was told that earlier the baker had a long nail with which he would put the cut with ) . Some still do it that way and some with knife recently

Hi Xanti, I have been living out of India for sometime now, and crave for the local undo everytime I go home to Goa. Never thought I would be able to bake them at home. Tried your recepie today and the unde turned out great. Had made Chicken xacuti too and the combination brought back memories of the local poder. I was not expecting them to turn out this good. The part about applying water and then dusting with wheat flour really helped make the outer crust ‘torrad’ in true goan style. Thank you for sharing.

Thank you for the receipes . You have made them so very easy to prepare . I have a query about the Pao receipe. You state that we need to use four cups of flour and you indicate that it is about 500 gms. As far as I am aware one cup is equivalent to 250 gms so four cups would make it 1 Kg. I guess it is a typo, Please clarify on the weight as you will know that a variance in weights can effect the product of the receipe.
