Prepare the Phenori Dough and sheets:- |

Add all the ingredients mentioned under 'For the Phenori Dough' in a bowl. (leave the ghee / oil for deep frying aside). Using about 3- 4 tbsp water knead a hard dough. (Should NOT be soft like a chapati dough). Cover the dough and keep aside for 30 minutes. |

After 30 minutes, divide the dough into 6 portions. |

Roll them out as thin as possible(About 7-8 inch in size). Keep them aside. |

Prepare the Flour Paste:- |

In a small bowl, mix the flour and butter. |

Keep mixing it with a spoon till nice and fluffy. |

Assemble and Deep fry:- |

Now, take a chapati, apply about 1 tsp of flour paste on it and spread it all over the chapati. |

Then, place 2nd chapati over the 1st chapati and repeat the process. |

Apply the flour paste over the 6th chapati as well. |

Now, roll the thick chapati , tightly and carefully. |

Cut the roll into 1/2 inch sized portions.(You will get about 10 pieces, cut the end portions). |

Take each piece, and keep it in a manner so that you can see the layers. Slightly slant and press it so that the layer part is visible. Do this for all the pieces. |

Take the rolling pin and slight roll each of the pieces lengthwise only. |

Deep fry them. |

Once they float on the oil, flip and fry on other side. |
|

Fry till you get a nice golden brown color. Drain them on paper absorbent towel. |

While still hot, sprinkle icing sugar over them. Let them cool completely. |

Dust icing sugar (more icing sugar if required) and serve. |

One can also roll them further and stuff with sweet-filling to make ‘sath pateancho nevreo’.
Wow… That sounds a good idea…. I guess people make that with colored dough too like green n pink? I have seen something like that before(Gujia with layers looks like phenori).

Tried out Phenori for the first time .Xanti your pictorial explanation makes it more easy to follow the recipe.I was happy that i made it at home and it turned out good.My little one loved it.Its always nice to give the kids homemade food.Thanks Xanti for making things simpler.
