Coming up with this innovation, I would suggest you to prepare shevyo with beetroot or carrots paste too. A very healthy version for kids.

Prepare the Shevyo:- | ||
1 | Given five ingredients - Mango, Red Chilies, Jaggery, Spinach and Cashew nuts | |
2 | Keep steamer ready with water on the flame. Make spinach puree. In a vessel, add the spinach puree, salt and 2 tbsp oil. Bring it to a boil. | |
3 | Add the rice flour. | |
4 | Mix well quickly. | |
5 | Till you get a dough together. | |
6 | Grease your sev maker with oil, stuff in the dough while hot. | |
7 | Make shevyo all around the plate. | |
8 | Place in steamer. Steam for 10 minutes on high flame. | |
9 | Remove from steamer , wait 3 minutes for shevyo to cool slightly and place Shevyo in a plate. Prepare the curry. | |
Prepare the Curry:- | ||
10 | In a vessel, boil the veggies, strain. | |
11 | Prepare curry, using coconut milk, mango puree, add the xacuti masala powder, mango puree. Get to a boil. Add the boiled veggies, cashewnuts, jaggery , mango pieces, salt as required. Cook for 5-7 minutes till done. | |
12 | Serve this curry with the shevyo. Enjoy!!! (See notes below). |
