Fry the Okras:- |

Wash and wipe the okras. |

Cut into 1- inch long pieces. |

Heat 1 tbsp oil in a skillet. Add the okras along with 1/2 tsp salt. Fry the okras till cooked and browned on all sides. Now, add 1/4 tsp tumeric powder and 1/2 tsp red chili powder. Fry for a minute. Keep okras aside. |

Prepare the Masala:- |

Grind onion, green chili, garlic, ginger with 1/4 cup water to form a smooth paste.
In the same skillet, add 3 tbsp Oil. Add the fennel seeds. Fry the onion paste till a golden brown color. |

Add the tomato puree along with turmeric powder, chili powder, garam masala, coriander powder and cumin powder. Fry for 2-3 minutes. Add 1/2 cup water , cover the pan and cook on low flame for 12-15 minutes stirring occasionally. |

Once you get a nice thick masala, add amchur powder, chaat masala and kasoori meethi(Crush kasoori meethi between palms to release the aroma) . Cook for another 2 minutes. |

Add the fried okras. Mix well. |
