Wash and wipe the tindoras. Cut each tindora into 4 pieces as shown. |

In a pan, add oil and cumin seeds. Allow them to splutter. Then add curry leaves, red chillies and garlic. Sauté for a minute. |

Add turmeric and chili powders. Sauté for about half a minute. |

Add the tindoras, mix well. Fry for 2-3 minutes. Add 4 tbsp water, cover the lid of pan and cook for 10 mins. |

Open lid after 10 mins and stir fry on high heat for 5 mins, add in the peanuts and mix well.Serve as side dish along with rice or with rotis. |

I tried this simple recipe with a twist and came out yummy…..a simple veggy can be made more delicious, just learned….thanks for sharing ur recipe ?
