1 | Wash and wipe the raw mangoes. Cut them into thin slices as show in the pic. | |
2 | Place the mango slices in a glass jar. Fill water(room temperature) till top of glass jar. Add the salt, sugar, chilies and vinegar. | |
3 | Let the mango slices get pickled for at least 2 weeks. Serve these slices with pez(Goan kangee) or with daily goan meals. |

Best would be to refrigerate it , as sometimes it catches a moss like texture on top floating over the water. It can last upto 6 months in the fridge.
Can we use baby mangoes instead of large raw mangoes?

Yes, you can try slicing the small raw mangoes.

Yes , of course use Goan vinegar … I just mention the use of white vinegar in my recipes as Iβm based in the US and donβt have access to Goan vinegar … π

Hi Xanti… i tried the mango sliced water pickle (korom). After a week it has formed white froth like bubbles on the top. Could you tell me if its normal or if theres something wrong with it

Yes sometimes it forms a white layer on top .
(Iβm not so expert in this area π¬) I donβt know the exact reason for this . (Iβm guessing coz of the salt content … not so sure )
