In a pan, add 1 tbsp oil, fry the onion and coconut till browned. Keep aside to cool. |

Once cooled, grind coconut with garlic, turmeric powder, xacuti masala powder(See recipe notes below for homemade xacuti masala powder / recipe link to make xacuti from scratch). |

Add sufficient water (I used about 3/4 cup) and grind it to make a fine paste. Keep the masala paste aside. |

Prepare the korma:- |

Cut all veggies. Cook the carrots, potatoes till half done. Remove and keep aside. Soak cashew nuts in hot water for about 15 minutes. |

Add 3-4 tbsp oil. Add curry leaves and fry onion till soft.(Do not brown it). Add the mushrooms and peas and cook till mushrooms are done. Remove and keep aside in another bowl. |

In same vessel, add a tbsp oil, add the masala. Fry it for about 3-4 minutes. |

Add the half cooked potatoes and carrots along with the soaked cashewnuts, tomatoes, french beans and the mushrooms and peas. Add 1/3 cup water. Add salt as required and add the sugar. |

Cover and cook for about 10 -15 minutes till done. Add coriander. |

Serve hot with rice, pao(See recipe notes below for homemade goan pao recipe) or rotis. |

This recipe is specific to veg xacuti ..
If you want to add garam masala , you need to add turmeric , chili powder , coriander powder etc …
